Gluten Free Chocolate Peanut Butter Balls

So I have to make cupcakes for the firefighters this week, and because there is a firefighter there that can’t eat gluten, I thought that this would be a GREAT time to try a gluten free recipe!  (Because it’s always great to have something for everyone!)

After talking to my Aunt (someone who also can’t have gluten), and double checking that everything I was using in the recipe was indeed gluten free, I started gathering all of my supplies..

(Original Recipe I used can be found here: VEGAN PEANUT BUTTER BALLS COVERED WITH CHOCOLATE) (I tweaked the recipe a bit and made it my own, feel free to try both ways!)

 

Ingredients:

  • 1 Cup of Smooth Creamy Peanut Butter (I used Jif)
  • 1/3 Cup Whipping cream (Not the spray kind people!  Actual whipping cream!)
  • 2 Cups of Powdered Sugar
  • 1 Bag of Chocolate Chips

 

Directions:

1. Add the powdered sugar and the peanut butter to a bowl, mix on low with a mixer.  It’ll be a very dry mixture, but don’t worry, we’ll fix that here in the next step!

2. Once the peanut butter and powdered sugar is mixed, pull out the whipping cream!  Slowly start to add the 1/3 cup of whipping cream (and don’t worry if you don’t use it all, I didn’t).  Mix until the mixture is soft enough to the point of making balls out of it (it’ll be just like the consistency of cookie dough!).

3. Place parchment paper on a pan, then shape the dough into balls and place them on the pan.  Depending on how big or small you make them, you’ll get around 20.  Then, place toothpicks in them to make the chocolate part that comes later a lot easier.

4. Put the peanut butter balls in the freezer for about an hour or two. (Or a very cold fridge for a few hours.)

5. Once your 1-2 hours are up, take a sauce pan and add about 1 1/2 cups of chocolate chips to it.  Place it on the stove on the lowest possible heat you can!  Keep stirring as it melts so that the chocolate doesn’t burn.  (Your peanut butter balls should still be in the freezer right now.)  Once the chocolate is melted, turn the stove off.

6. Now you can take the peanut butter balls out of the freezer (or fridge).  With the toothpicks still in them, dip them in the chocolate so that MOST of it is covered (like the balls on the top of the picture below).  Place them back on the parchment paper.  Next, take the toothpicks out and use a spoon or spatula to add the rest of the chocolate in the pan over the top (so that they look like the balls on the bottom in the picture below).

7. Place them back in the freezer (or fridge) for a few minutes to let the chocolate harden.  Keep in the fridge and eat as wanted. (Watch out, the chocolate gets melty once it’s out of the fridge, so eat it quick!)

They taste just like Reeses cups!  So if you’re a fan of Reeses, these are the snacks for you!  Tell me what you think if you make them, and how they turned out for you!
