Peanut butter no-bake cookies!

I love no-bake cookies!  I used to make them all the time for my family before I moved in with my grandparents.  Sadly, my grandmother isn’t the biggest fan of chocolate, so I had to come up with a way to keep my favorite cookies, but make them so that my grandmother could enjoy them too.  I can’t tell you how many recipes I looked through, made, and tested before we found a recipe we all liked.

So, for anyone who loves peanut butter, but aren’t a big fan of chocolate, here is the recipe for you!

 

Peanut Butter No-Bakes:

 

What you need:

  • 3 Cups of Sugar
  • 3/4 Cup of Butter (1 1/2 Sticks)
  • 3/4 Cup of Milk
  • 1/2 teaspoon of Vanilla Extract
  • 1 1/2 Cups Peanut Butter
  • 4 1/2 Cups of quick cooking oats
  • Large saucepan
  • Wax paper

 

1. Prepare your kitchen by putting a big saucepan on the stove and a strip of wax paper on the counter.  You will need plenty of room for the wax paper, as it’ll take about 2-3 feet of wax paper to hold all of these cookies.

 

2.  Turn the burner on medium.  In a large saucepan, add the butter and allow it to start melting.

3.  Slowly add 2 of the 3 cups of sugar while the butter is melting.  This will allow the sugar to melt down as well, otherwise, you’ll have little grains of sugar in your cookies that you can plainly taste.

4.  Add the milk and the 3rd and final cup of sugar.  Stir until the milk mixes with the butter, and then turn heat up to high.

5.  Wait until it starts to boil.  The second you see bubbles coming up, put a timer on your phone for 60 seconds.  Let it boil for 60 seconds (without stirring it!) and then take it off the burner.

6.  Quickly add the peanut butter and the vanilla!  Stir.

7.  Quickly add in the oats as well and stir.  It will start to set up as soon as you do this, don’t worry, it’s normal!  You’re almost done!

8.  Bring the pan over to where you have placed your wax paper (be careful!  It’s hot!) and start scooping it out of the pan and onto the wax paper.  Maybe ask someone to help with this, as the hot pan can be hard to hold and scoop out without burning yourself.

9.  Don’t forget to clean up, and let your kids lick the spoon!  (Or lick the spoon yourself and hide from everyone else!)

 

My cookies in the picture above didn’t set up very well and look a little liquidy.  Your cookies should look more firm and be ready to eat as soon as possible!  Sadly, I may have let my cookies boil for a little longer then 60 seconds because I was trying to get a good picture for my blog.  Don’t make the same mistake as me..  (Make your own mistakes!)

Now it is time to eat your cookies!  Don’t worry if they don’t fully set up right away.  That’s what spoons are for!
